The most authentic Maremma comes to Poggibonsi

Now in its fifth edition, Flavours of Maremma brings the scents and most authentic products of Maremma Toscana to Alcide. The guest of honour is chef Massimo Bucci from Morgante in Gavorrano, who tells the story of the Organic District of Colline della Pia through his dishes.

A tasting dinner that brings together ancient grains, wild herbs, local organic produce and the tradition of Cinta Senese pork, paired with Maremma Toscana DOC wines from La Magia: Costamurata Vermentino, Poggetti Lepri Sangiovese and Valesassa Merlot.

How the evening unfolds

The evening opens with a buffet of Maremma-style antipasti: oven-baked polenta with Maremma sauce, marinated organic vegetables from Morgante and pappa al pomodoro with aglione della Pia, paired with Costamurata Vermentino. At the table, a panna cotta of Maremma pecorino with dried fruit and wildflower honey welcomes guests before the first course.

The heart of the evening is ancient grain tortelli with local ricotta, wild herbs and Cinta Senese ragù, followed by slow-cooked pork fillet with Vin Santo, figs and walnuts on Jerusalem artichoke purée. Dessert is signed by Gelateria Dondoli of San Gimignano: Morgante chocolate caprese with chestnut cream gelato.

Price: €59 all inclusive, water, wines, coffee and digestifs included.
