When the scent of truffle meets the sea
An evening dedicated to one of the most fascinating pairings in Italian cuisine: spring truffle and the sea. Intense earthy aromas blend with the delicacy of raw langoustine, seared scallop and pan-fried royal meagre in a journey designed to surprise at every course.
The wines are from Arnaldo Caprai, a winemaker based in Montefalco, Umbria: Grecante Colli Martani Grechetto DOC, Montefalco Bianco DOC and Puntabella Rosato IGT accompany the journey between sea and truffle, bringing a different but equally characterful territory to the table.
How the evening unfolds
The antipasti open the evening with three seafood and truffle bites: raw Mediterranean langoustine with mascarpone and spring truffle shavings, seared scallop with Jerusalem artichoke cream and truffle, and a crispy calamari nest with celeriac velouté. The first course brings fresh tagliolini with raw prawn tartare, tossed in mountain butter and spring truffle.
The main is a fillet of royal meagre with herb-infused fondant potatoes, a light lemon jus and truffle shavings. Dessert closes elegantly: a ricotta and Williams pear tart with acacia honey and a delicate final note of spring truffle.
Price: €69 per person, wines, water and coffee included.
