Cacciucco, Alcide's Historic Recipe
Born in the mid-19th century to welcome a group of workers from Livorno in Poggibonsi, it has become one of the most beloved dishes at our restaurant. Alcide's Cacciucco is a rich, intense fish stew inspired by the famous Livorno dish. Maria Ancillotti, winner of the prestigious Golden Chef award in 1968, had the merit of reworking it and turning it into the restaurant's signature dish, winning the bet of serving a seafood soup in the heart of Tuscany. Cacciucco is also linked to Cacciucco Day, our historic annual event during which Alcide hosts a prestigious restaurant specialising in seafood dishes.
